Strawberry Shortcake
Light & Fluffy Dessert
ingredients
- 1 box Angel Food Cake
- 4 cups Fresh Strawberries
- 1/2 water
- 1 cup sugar
- 2 tsp lemon juice
- whip cream
- 24 Muffin Tin (2 twelve)
- Large Metal Bowl
- Electric Mixer
- Medium Pot
- Spatula
- knife
- wooden spoon

Cake Preparation:

Follow instructions on cake box. Do not use Funnel Pan. Instead use muffin tin. Only need to bake for 8 -10 minutes. (makes 24)

Strawberry Filling:
- 4
Wash and cut strawberries. Slice and put into pot. Add water, sugar and lemon juice. Bring to a boil and then lower temperature. Heat for 10 minutes and then remove from stove.

Once the angel food muffins have cooled remove from tin. Cut the top off. Scoop 1/2 cup of strawberries from pot onto the bottom half of the angel food muffin. Put a scoop of whip cream on top and then place the angel food muffin back on top.

Makes 8 - 10 strawberry shortcakes. I use the remaining angel food muffins as a light snack before bed
