Baked Salmon Loaf

This is one of Corrie Hobart’s recipes. (Corrie was Daddy’s older sister.) Kay and I would spend a week each summer at “Aunt Corrie’s” home in the Mississppi Delta at Avon, MS. What fun! ....Ann

  • 1 one pound can salmon

  • 2 cups soft bread crumbs

  • 2 eggs beaten

  • 1 cup milk

  • 1 onion, minced (optional)

  • 1 Tablespoon corn meal

  • 1/2 green pepper, chopped

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 1 Tablespoon shortening

  • 1 Tablespoon lemon juice

  • Mix all ingredients. Press into loaf shape. Place in open pan lined with heavily greased aluminum foil.

  • Bake 40 minutes at 375°.
