Grecian-Style Chicken
ingredients
- 4 boneless and skinless chicken breast halves
- 1/4 cup wheat germ
- Olive oil
- 1 cup sliced zucchini
- 1/3 cup chopped green pepper
- 1/2 red onion sliced and separated into rings
- 2 cloves garlic
- Salt and pepper
- 4 tsp fresh squeezed lime juice
- 2 tomatoes sliced into wedges
- Couscous or rice
- 1/2 cup crumbled feta cheese

Rinse Chicken and pat dry with paper towel. Place Wheat Germ in a shallow dish and dredge chicken until covered.

Heat Olive Oil in a large skillet and cook chicken 10 to 15 minutes until crispy brown, turning once. Remove from heat and keep warm.

Add Zucchini, Green Pepper, Onion, Garlic, Salt and Pepper to skillet and cook about 3 to 4 minutes until vegetables are crisp-tender. Remove from heat and add Lime Juice and stir in Tomato Wedges.

Serve on dinner plate, placing vegetable mixture on top of rice. Then place chicken on top and finally sprinkle Feta Cheese over all.
