Zucchini Squash Bake
Healthy & flavorful. Great for summer, as these vegetables are cheap then.
ingredients
- 1/2 yellow onion
- 2 cloves garlic
- 4 zucchini
- 4 yellow squash
- 2 tbsp + 2 tbsp olive oil
- basil
- parsley
- grated parmesan cheese

Preheat oven to 375 degrees.

Heat 2 tbsp olive oil in skillet. Add onion and garlic, sauté until browned.

Slice zucchini and squash 1/4-inch slices, keep in separate bowls. Toss zucchini with 1 tbsp olive oil and basil and parsley to taste. Toss squash with 1 tbsp olive oil and basil and parsley to taste.

Spray 11x7 or 8x8 pan with cooking spray. Spread onion and garlic on bottom of pan. Place zucchini and squash on top of onion garlic, standing them up in tight rows. Alternate the zucchini and squash.

Place in oven and bake for 25 minutes. Remove, sprinkle with Parmesan cheese, and heat for five more minutes. Remove and serve immediately.
