Chicken, Chili, and Cheese Enchilada
ingredients
- 2C cooked chicken cubed
- 2 1/2C jack cheese shredded
- 1/2C red onion chopped
- 10 (7in) four tortillas
- 2C chicken broth
- 1 1/2C sour cream
- 1 can diced green chilies drained
- 2T butter
- 2T flour
directions

1. Mix together red onion, chicken, and

2. Place 2T (approx) in each tortilla

roll up,place seam side down in

7x13 inch pan to form enchilada

3. In a med size sauce pan melt the

butter, add flour stir until bubbly

Add broth and stir until thick

4. Remove from burner, stir in sour

cream and chilies

5. Pour mixture from sauce pan over

enchiladas

6. Top with remaining cheese

7. Bake uncovered at 350 degrees for
