Cidered Apple & Pecan Baked Brie

ingredients

  • 2 McIntosh apples, peeled, cored, chopped large
  • 1/4 t. cinnamon
  • 2 T. apple jelly or apricot
  • 1/3 c. golden raisins
  • 1 c. apple cider or apple juice
  • 1/3 c. chopped toasted pecans
  • 1 (6-8") round of Brie
  • Slices of french bread, sliced thinly or water water crackers

directions

Cook apple and raisins in cider along with the cinnamon on top of stove until apples are tender and not mushy (1-2 min). Drain well and add 2 T. apple jelly. Put Brie in ovenproof dish and put apple-raisin mixture on top of Brie. Use parchment paper under. Top with pecans and bake at 350 degrees for 10 minutes or until brie softens. Watch carefully so it does not melt. Serve with french bread slices or water wafers. Garnish with parsley if desired.
