Ham and Cheese Sandwiches

ingredients

  • 2T Minced Shallots
  • 1T Butter
  • 1T Flour
  • 1/4C Chicken Broth
  • 1/4C Milk
  • 6oz Fontina (Gruyere or Swiss)Cheese, shredded (1 1/2C)
  • 1/16 t Ground Nutmeg
  • 8 Slices Firm White Bread
  • 1/4lb Thinly Sliced Ham
  • Dijon Mustard

    Fry shallots in butter until golden brown. Blend in flour. Remvoe from heat, blend in milk and broth. Return to heat and whisk until boiling vigourously. Remove from heat. Add cheese and nutmeg. Stir until cheese is melted. Set aside in a bowl.

    Butter outsides of the bread slices. Spread 1/2 of the cheese sauce equally among 4 slices of bread. Layer with ham. Spread remaining 4 slices of bread with mustard and top the sandwich. Grill in frying pan until well browned.

    Place sandwiches on a broiler pan. Cover with remaining cheese sauce. Broil until cheese is bubbling and lightly browned.
