Veggie Chili
Spicy, Southwest veggie stew
ingredients
- 2 Tablespoons of Olive Oil
- 3 small onions, diced
- 3 cloves of garlic, minced
- 1 teaspoon of chili powder
- 1 jalapeño, seeded and diced
- 1 red pepper, seeded and diced
- 2 medium carrots, sliced
- 1 small zucchini, halved lengthwise & sliced crosswise
- 1 medium can crushed tomatoes
- 11 ounces of frozen corn, thawed and drained
- 1 can beans (kidney or black) drained and rinsed
- 1/2 teaspoon each:
- Oregano
- Cumin
- Salt
- Black pepper

Heat oil in large saucepan over medium heat

Add onion and garlic – sauté 3 minutes
- 3
Stir in chili powder, jalapeño and red pepper – sauté 3 minutes

Add carrots, zucchini and tomatoes – cover and cook until carrots are softened

Add corn, beans, oregano, cumin, salt and pepper – cook until heated through
