Spicy, Southwest veggie stew

ingredients

  • 2 Tablespoons of Olive Oil
  • 3 small onions, diced
  • 3 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1 jalapeño, seeded and diced
  • 1 red pepper, seeded and diced
  • 2 medium carrots, sliced
  • 1 small zucchini, halved lengthwise & sliced crosswise
  • 1 medium can crushed tomatoes
  • 11 ounces of frozen corn, thawed and drained
  • 1 can beans (kidney or black) drained and rinsed
  • 1/2 teaspoon each:
  • Oregano
  • Cumin
  • Salt
  • Black pepper

    Heat oil in large saucepan over medium heat

  • 2

    Add onion and garlic – sauté 3 minutes

  • 3

    Stir in chili powder, jalapeño and red pepper – sauté 3 minutes

  • 4

    Add carrots, zucchini and tomatoes – cover and cook until carrots are softened

  • 5

    Add corn, beans, oregano, cumin, salt and pepper – cook until heated through

Found this in a magazine eons ago and loved it. It gets hotter overnight.
