Corn Custard Scallop
A Swansen family favorite at the holidays
ingredients
- 2 slices of bacon
- 1 tablespoon chopped onion
- 16 ounce can cream style corn
- 1/2 cup dried bread crumbs
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 2 eggs slightly beaten

Heat oven to 375 degrees. In a medium skillet fry the bacon until crisp.Crumble bacon once cooked.

In the same skillet, saute onion in bacon fat, until tender.

Remove from heat and pour off excess drippings. Add corn, bread crumbs, sugar, salt, eggs, and bacon. Mix well.

Pour into a 1-1/2 quart casserole. Bake at 375 degrees for 40-45 minutes or until set.
