Faith's Feta and Shrimp Orzo Salad
ingredients
- 3/4 pound orzo, al dente
- 1 cucumber, seeded, quartered lengthwise and sliced
- 3 green onions, chopped
- 1 pint grape tomatoes, halved
- 1/4 cup fresh dill
- 1/4 cup white wine vinegar
- 3 Tablespoons Dijon mustard
- 1/2 cup olive oil
- 3/4 pound feta, crumbled
- 16 medium shrimp (or equal amount cube chicken)
- Salt and Pepper

Combine orzo, cucumber, green onionis and tomatoes.

Blend dill, vinegar and mustard until smooth. With motor on, slowly add olive oil until emulsified. Add salt and pepper to taste.

Pour sauce over orzo mixture. Stir well.

Fold in feta.

Heat grill. Brush shrimp (or chicken) with oilive oil, salt and pepper. Cook about 2 minutes on each side. Add to salad while still warm.

Garnish with dill.
