Hungry Jack Tomato Muffins
ingredients
- 1 medium diced tomato
- 1/2 small diced onion
- 1 tsp basil
- 1/3 cup bacon bits
- 3 oz Mozzarella cheese
- 1/2 cup of mayo
- 1 can Hungry Jack Biscuit

Mix first 6 ingredients and set aside.

Separate biscuit (1 biscuit makes 3 mini muffins) Place in mini muffin pan.

Spoon tomato mixture into each muffin.

Bake @ 375 for 12 minutes.
