ingredients

  • Cupcakes:
  • 2 squares Bittersweet Chocolate
  • 2 ounces Butter or margarine (1/2 stick)
  • 1/2 cup of water
  • 1 cup sugar
  • 1 cup of sifted flour
  • 3/4 teaspoon baking soda
  • 1/4 cup of milk
  • 3 teaspoons vinegar
  • 1 egg
  • Cheesecake Filling:
  • 3/4 pound Cream Cheese
  • 1/2 cup Sugar
  • 2 eggs
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 3/4 cups mini Chocolate Chips
  • 3/4 cups Pecans

    Cupcakes:

    Add Chocolate, Butter and Water to saucepan and melt of over low heat. Add sugar, flour, baking soda. Combine vinegar and milk in small bowl and mix together. Now add milk to saucepan. Add egg and beat batter until smooth.

    Cheesecake Filling:

    Using an electric mixer, blend cream cheese and sugar. Beat in eggs 1 at a time, then beat 1 minute. Mix in vanilla, salt, pecans, and chocolate chips.

    Preheat oven to 350 degrees. Line twelve 4 ounce muffin cups with cupcake liners. Divide batter evenly in cups. Make whole in center of batter with spoon. Place 2 tablespoons cream cheese filling in each whole. Bake until firm, about 25 minutes. Let cool completely
