Black Bean Salad
ingredients
- 3 table spoons chopped cilantro
- 3 table spoons olive oil
- 1 table spoon lemon juice (I like fresh)
- 3 garlic cloves (minced)
- 2 jalapeno peppers chopped or as hot as you like
- 2 table spoons chopped fresh oregano
- 1 1/2 teaspoon cumin powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 3 cups chicken (optional)
- 1 (15 oz.) black beans rinsed
- 1 cup frozen whole kernel corn (thawed)
- 1 large tomatoes diced (optional)
- 1 package taco shells/chips (optional)
- 6-8 cups lettuce (optional)

1.Put first 8 ingredients in a large bowl and mix.

2. Add chicken and next 4 ingredients tossing to coat.

3. Cover and chill and enjoy!

I use this recipe a lot for a side dish, I don't put chicken, tomatoes, lettuce or taco shells. It's a nice vegetarian side dish if you don't add chicken. You can also eat it with pita chips or tortilla chips.
