Spicy Sesame Noodles with Chopped Peanuts
Easy, quick, delicious appetizer
ingredients
- 2 tablespoon peanut oil
- 3 tablespoons minced peeled fresh ginger
- 3 garlic cloves, minced
- 6 tablespoons Asian sesame oil
- 3 tablespoons soy sauce
- 4 tablespoons rice vinegar
- 3 tablespoons plum sauce or duck sauce
- 2 tablespoons oyster sauce (if at hand)
- 1 1/2 tablespoons sugar
- 1 tablespoon (or more) hot chili oil* (or chili paste)
- 1/2 cup shredded carrot
- 1/4 cup minced roasted peanuts
- 1/2 pound fresh Chinese egg noodles or fresh angel hair pasta
- 9 green onions (white and pale green parts only), thinly sliced (green parts can be added as decoration in vertical thin strips)
- 1/2 cup coarsely chopped roasted peanuts

1. Heat peanut oil in small skillet over medium heat. Add ginger and garlic; sauté 1 minute. Transfer to large bowl. Add next 7 ingredients; whisk to blend.

2. Cook noodles in hot water, drain under cold water and place in a bowl.

3. In a separate bowl mix by parts pasta and sauce until everything is evenly coated (the pasta should absorb sauce and there should not be a lot of excess liquid). If needed, repeat steps to make more sauce and add to pasta until evenly coated.

4. Add sliced green onions, carrot and minced peanuts and toss to coat noodles.

5. Let stand at room temperature until noodles have absorbed dressing, tossing occasionally, about 1 hour.

6. Stir in peanuts chopped peanuts and; toss again.

Serve at room temperature.
notes
Can add red peppers and other vegetables or chicken as desired.
