White Bean, Roasted Chicken Salad
No cooking if using rotisserie chicken
ingredients
- salad:
- 2 cups chopped rotisserie chicken
- 1 cup red tomato, chopped
- 1/2 cup red onion, thinly sliced
- 1/3 cup fresh basil, sliced
- 1 16 oz cans cannellini bean, rinsed
- 1 cup herbed croutons
- dressing:
- 1/4 cup red wine vinegar
- 2 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon fresh ground pepper
- 2 garlic cloves, minced

To prepare salad, place first 5 ingredients in a large bowl, stir gently to combine.

To prepare dressing, combine vinegar and remaining ingredients, stirring with a whisk. Drizzle dressing over salad, tossing gently to coat.
