Mommy's Mexican Casserole!
Types of casserole include ragout, hotpot, cassoulet and carbonnade. Casseroles usually consist of one or two meats or vegetables as the main ingredients. Liquid in the form of stock, wine, beer, gin, cider or vegetable juice is added.
ingredients
- 8 oz. macaroni shells
- 2 cans tuna or 1 lb. tofu
- 1 cup chopped onion
- 2 cloves garlic, crushed
- 1 tbsp. worcestershire sauce
- 1 tsp. salt
- 1 can cream of mushroom soup
- 1 can tomato soup
- 12 oz. sharp cheddar cheese, grated
- 1 cup water
- 2 cups loose corn
- 1 can red kidney beans, drained
- 1 cup black olives, sliced, pitted

1) Cook and drain the macaroni shells

2) In a large skillet, over medium heat, cook the onion and garlic in the liquid with bouillon from until the onion is tender. Stir in the worcestershire sauce, chili powder and salt. Cook for two minutes, stirring

3) Add the mushroom soup, tomato soup, 2 cups of the cheese, the cubed tofu, and the water. Cook and stir until bubbly

4) Pour the mixture into a well greased casserole. Add the shells, corm, beans, and olives. Mix well. Sprinkle remaining cheese on top

5) Cover and bake for about 30 minutes, until hot and bubbly. Remove cover. Bake from 5 to 10 minutes longer until lightly browned

Delicious!! Prepare in a large soup pot. Cook everything in pot first, then bake at 350°F for about 20 minutes, covered Can also be made without cheese, if you so dare
