Venus' Favorite Coconut Chicken
My Aunt Venus NEVER lies. This chicken is delicious! :)
ingredients
- 2 lbs. chicken breast, cut into strips and flattened
- 1/2 C. water
- 1 egg
- 1 C. a.p. flour
- Sweetened coconut
- Buttermilk for marinating
- Olive oil for frying

Marinate chicken strips in buttermilk and s/p for 24 hours. This is essential, as it tenderizes your chicken.

Drain chicken, dip into water/egg/flour batter, then dip into coconut. Fry immediately until golden. (Low & slow is best.)
notes
I recommend olive oil or peanut oil for this recipe because they stand up to the heat. I prefer the clean taste of olive oil, but that's just my opinion.
