Sweet Spicy Chicken with Lime and Coriander Couscous
ingredients
SWEET SPICY CHICKEN INGREDIENTS- 1 medium onion
- 1 large red chili
- 4cm fresh root ginger
- 550g tomatoes
- Oil
- 8 boned chicken thighs
- 2 garlic cloves
- 1 cinnamon stick
- 1/2 tsp ground turmeric
- 450ml chicken stock
- 90ml coconut milk
- Punnet of baby tomatoes
- 350g French Beans (chopped to 1 inch lengths)
- 3 limes
- 225g couscous
- 325ml chicken stock
- 3 Tbsp fresh coriander
- 2 Tbsp olive oil

SWEET SPICY CHICKEN PREPARATION

1) Slice the onion, finely chop the chili, peel and grate the ginger. Plunge the tomatoes into boiling water for 10 seconds, then into ice cold water. Drain, skin, quarter.

2)Heat oil in a large pan and fry chicken until browned on each side. drain on kitchen paper.

3) Lower the heat and fry the onion until soft and golden brown (about 10 mins). Add the chilli, ginger, crushed garlic, tumeric and cinnamon stick and fry for a further 2-3 mins. Stir in the chicken stock and coconut. Bring up to a gentle simmer, stirring all the time, then bubble for about 5 mins.

4) Add the chopped tomatoes and return the chicken to the casserole and simmer, uncovered, for about 25 mins.

5) Add the punnet of baby tomatoes 5 mins before the end.

6) Serve with Lime and Corinader Couscous.
LIME & CORIANDER COUSCOUS PREPARATION

1) Cook the beans in boiling, salted water for about 5 mins or until tender. Drain and refresh under cold running water. Finely grate the zest from 2 limes and squeeze the juice from them all.

2) Heat the oil in a saucepan, add the couscous and stir for 30 seconds over the heat. Stir in the chicken stock and lime juice, take off heat and cover for about 10 mins.

3) Stir in the lime zest, coriander and beans into the couscous, season with salt and pepper.
