Mexican Rice
ingredients
- 1 cup white rice
- 2 Tbsp oil
- 2 cups water
- 1 can Mexican stewed tomatoes
- 1 onion, chopped
- 1 green pepper, chopped
- salt and chili powder to taste

Brown rice in oil.

Add additional ingredients and bring to a boil. Cover and simmer 20-25 minutes until rice is cooked and liquid is absorbed.
