Frog-Eye Salad
ingredients
- 1 C. sugar
- 2 C. pineapple juice
- 2 1/2 Tbs. flour
- 2 eggs beaten
- 1/2 tsp. salt
- 1 can crushed pineapple
- 16 ounce Acini de Pepe
- 1 can fruit cocktail
- 1 can pineapple tidbits
- 1 carton (9 oz) cool whip
- 1-2 cans mandarin oranges
- 1 1/2 C. colored mini-marshmallows
- maraschino cherries, cut in half
- coconut (optional)

Mix sugar, flour salt and then add eggs and pineapple juice and cook over medium heat until thickened. Let cool.

Cook Acini de Pepe (or star macaroni) in 3 quarts boiling water with salt and 1 Tbs. oil until tender. Drain and rinse with cool water and then let cool. Mix egg mixture with macaroni and refrigerate overnight in air-tight container.

Then add the following in the morning; fruit cocktail, pineapple, oranges, maraschino cherries, cool whip and marshmallows
