Christine's Chicken Suiza Enchiladas
ingredients
Tortillas and Sauce- 10 corn tortillas
- 1/4 C butter
- 1/4 C flour
- 1/2 tsp cumin
- 1 14 oz can chicken broth
- 1 C sour cream
- 1 4 oz can chopped green chilies
- 1 1/2 c. diced cooked chicken
- 1 1/2 c. shredded Jack cheese
- 1 1/2 c shredded Cheddar
- 3/4 c. chopped onion, sauteed until soft
- chopped cilantro
directions
Melt butter, add flour to make a roux, add cumin and chilies. Add stock, then sour cream. Pour 1/3 of sauce in the bottom of a well greased 9”X11” baking dish. Fill tortillas with chicken/cheese mixture: about 1/4 C chicken, cheeses, a little onion and a sprinkle of cilantro. Roll up and place close together seam side down. Top with the rest of the sauce. Bake at 450° covered with foil for 20 min. then remove foil and add more cheese, bake 5 more min.
notes
This dish can be frozen wrapped tightly and baked later. Fully defrost before baking.
