Warmed Brie Stuffed with Sherried Blue Cheese and Fruit Topping

ingredients

  • 1 round 8 oz. Brie (or larger, just double recipe)
  • 6 oz. cream cheese, softened
  • 1/2 c. blue cheese, crumbled
  • 1/4 c. sherry
  • 1/4 c. sliced grapes
  • 1/2 c. diced apple (red and green preferred)
  • 1/4 c. toasted almonds sliced
  • crackers or slices of french bread

    Wrap aluminum foil around brie before baking.

    Slice Brie in half, horizontally. I remove the top rind, but it is optional. Beat the cream cheese, blue cheese and sherry together. Cut a piece of parchment paper the size of the brie. Place it on a baking pan with sides and lay the bottom half of the Brie on it. Spread the blue cheese mixture over it. Top with the top half of the brie. Can do up to 1 day ahead. When ready to serve, place stuffed Brie in the 325 degree oven for 10-12 minutes until brie softens (do not let it melt). Remove from oven. Place on serving plate, including the piece of parchment paper. Mix the grapes, apples and almonds and spoon over the top. Surround with crackers or french bread.
