Miriam's Potato Salad
ingredients
- 2 pounds red potatoes unpeeled cut in 1/2 inch cubes
- 3/4 cup olive oil
- 1/4 cup fresh lemon juice
- 1 cup chopped onion (optional)
- 1/4 cup chopped fresh basil
- 1/4 cup chopped green pepper
- salt, pepper

In a small bowl, mix the lemon juice with the salt, pepper, onion and basil.

Cook the potatoes in a large pot of boiling, salted water until tender.

Drain and cool.

Add the potatoes to the mixture

Add more salt and pepper, if desired.

Serve at room temperature.
