Cowboy Caviar
ingredients
- 2 Tbsp Red Wine Vinegar
- 2 Tsp Hot Sauce
- 1 1/2 Tsp Vegetable Oil
- 1 Fresh Garlic Clove, minced
- 1/8 Tsp Black Pepper
- 1 Firm-Ripe Avocado
- 1/2 white onion, chopped
- 1 can (15 oz.) Black Eyed Peas
- 1 can (11 oz.) Yellow-White Corn
- 1/2 cup Fresh Cilantro, chopped
- 1/2 pound Roma Tomatoes, chopped

1. In a large bowl, mix vinegar, hot sauce, oil, garlic, and pepper.

2. Peel, pit and cut avocado into 1/2 in. cubes.

3. Add avocado to mixture and mix to gently coat.

4. Drain and rinse peas and corn.

5. Add peas, corn, onions, cilantro, and tomatoes to avocado; mix gently to coat.

6. Add salt to taste.

7. Serve with tortilla chips or add chopped cabbage to make a salad.
