Enchiladas
ingredients
- 1 lb. ground beef
- 1/2 chopped onion
- 1/4 tsp. pepper
- 1/2 C. sour cream
- 1 C. shredded cheese (Colby/Jack)
- 15 oz. tomato sauce
- 2/3 C. water
- 1/3 C chopped green pepper
- 1 Tbl. chili powder
- 1/2 tsp. oregano
- 1/4 tsp. cumin
- 1 clove garlic
- 8 tortillas

Slightly brown meat, add onions and black pepper and finish browning. When brown mix in sour cream and sprinkle with the shredded cheese. Let stand till melted.

In a small pot add next 7 ingredients and heat.

Coat each side of tortilla with sauce and fill with beef mixture. Pour extra sauce over enchiladas when all are made. Put into greased casserole pan and bake 20 minutes at 350 degrees.
notes
Refried beans can also be added to meat mixture in tortillas.
