Mini Cheesecakes
These easy to make cakes can be made ahead and frozen. Just let stand at room temperature for 60 minutes to thaw then garnish and serve.
ingredients
- 1/3 Cup graham cracker crumbs
- 1 Tbsp melted margarine
- 1/4 Cup sugar
- 1/2 Tsp grated lemon peel
- 1 Large egg
- 1 Tbsp sugar
- 8 Ounces cream cheese softened
- 1 1/2 Tsp lemon juice
- 1/4 Tsp vanilla
- Strawberry, peach or apricot preserves for garnishing the top

Combine crumbs, sugar and margarine. Press rounded measuring Tablespoons full of crumb mixture onto the bottom of each of 6 paper lined muffin cups.

Bake at 325 degrees F for 5 minutes.

Combine cream cheese, sugar, juice, peel and vanilla. Mix at medium speed on electric mixer until well blended then blend in egg.

Pour mixture over crust, filling each cup 3/4 full.

Bake at 325 degrees F for 25 minutes. Cool before removing from pan. Chill.

Top with garnish of choice just before serving.
