White Bean Pork Soup
Simmer 30 minutes
ingredients
- 1 pork tenderloin, smoked if possible
- 2 ears for fresh sweet corn
- 1 large onion
- 4 garlic cloves, sliced
- 1 14 oz can chopped tomatoes, 3-4 fresh
- 2-3 cups white cannellini beans
- 1/4 cup white wine
- salt & pepper
- dash cayenne pepper if desired
- 2 cups chicken stock

Cut pork into small bite size pieces. Cook pork in olive oil until cooked. Remove pork to a plate.

Saute onion, garlic & corn in pork pan for 5 minutes under medium heat. Add all other ingredients and simmer for 30 minutes.
