Patti's Greek Lemon Soup

Bring chicken broth to a boil and add rice. Simmer for 30 minutes or until rice is tender. Beat egg yolks and lemon juice until frothy and slowly stir until 1 cup of broth. Pour this mixture back into the rest of the soup, stirring constantly. Reheat to just below boiling point and serve immediately.
