Cheryl's Poppy Seed Salad
Unique, light and delicious.
ingredients
- 1/2 head Napa cabbage (also known as Chinese cabbage)
- 1/2 head red leaf lettuse
- 1/2 cup almonds, sliced
- 1 can (11 oz.) mandarin oranges, drained
- 1/3 red onion, thinly sliced into rings
- Dressing:
- 1 1/2 Tbsp. very mild honey
- 1/2 tsp. dry mustard
- 1/2 tsp. salt
- 1 1/2 tsp. onion juice (grate onion, then press juice from it)
- 3 Tbsp. rice vinegar
- 1/2 cup extra virgin olive oil (add gradually, beating with wire whisk)
- 5 Tbsp. poppy seeds

Wash and drain greens. Tear lettuce into bite-sized pieces. Slice each cabbage leaf lengthwise down the rib, then slice across into bite-sized pieces. Add almonds, oranges and onion, toss.

Beat dressing until thick and toss with salad. Dress salad at the very last minute before serving.
