Swiss Chicken
ingredients
- 8 chicken breasts (boned and skin removed);
- lemon juice
- salt and pepper
- flour
- paprika
- 1/2 tsp. oregano
- 1/2 tsp. salt,
- 1 tsp. tarragon

8 chicken breasts (boned and skin removed); sprinkle with lemon juice, salt and pepper to taste.

Mix in a paper bag: flour, paprika, 1/2 tsp. oregano, 1/2 tsp. salt,

1 tsp. tarragon. Shake moistened chicken in bag and fry in lots of butter till brown.

Remove to a casserole and add: 1 can clear chicken broth and

1 c. good sherry. Cover and simmer for about 30 minutes; with remaining butter add fresh or canned mushrooms in a 200 oven till bubbly. Serve with mashed potatoes and vegetable.
