Peanut Butter Chocolate Chip Cookies

ingredients

  • 1/2 c. butter, softened
  • 3/4 c. sugar
  • 2/3 c. firmly packed brown sugar
  • 2 egg whites
  • 1 1/4 c. regular or chunky peanut butter
  • 1 1/2 tsp. vanilla
  • 1 c. all purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1-12 oz pkg. semisweet chocolate chips

    Beat butter at medium speed with mixer until creamy; gradually add sugar, beating well. Add egg whites, beating well. STIR in peanut butter and vanilla. Set aside.

    Combine flour, baking soda and salt. STIR this into butter mixture. Mix well. STIR in chocolate chips.

    Shape dough into 1 1/2 inch balls and place 2 inches apart on parchment paper lined cookie sheets.

    Bake at 350° for 11 minutes or until slightly brown. Cool.

notes

It is important to stir rather than use mixer.
