Mini Chocolate Chip Cheesecakes
I like to make these mini cheesecakes at Christmas.
ingredients
- 1 1/2 cups graham cracker crumbs
- 1/2 cup sugar
- 1/4 cup baking cocoa
- 1/3 cup unsalted butter, melted
- 2 cups (12-ounce package) mini semi-sweet chocolate chips, divided
- 3 8-ounce packages cream cheese, softened
- 1 14-ounce can Eagle Brand Sweetened Condensed Milk
- 3 eggs
- 2 t. vanilla extract

1. Heat oven to 300. Paper-line or spray with cooking spray 30 muffin cups.

2. Stir together crumbs, sugar, cocoa and butter; press equal portions on bottom of prepared cups.

3. In a small saucepan over low heat, melt 1 cup chips.

4. In a large mixer bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk and melted chips until smooth. Add eggs and vanilla; mix well. Spoon batter into cups. Top with remaining chips. Bake 20 minutes or until set. Cook; refrigerate.
notes
Option: You can omit the melted chips and proceed with the recipe for a vanilla cheesecake batter.
