Mommy's Glazed Espresso Chocolate Cake!
ingredients
- Cake:
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1/3 cup non-hydrogenated margarine
- 4 egg whites
- 1 tsp. vanilla
- 1/4 cup unsweetened cocoa powder
- 1 cup whole wheat flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 cup hot strong coffee
- 1/3 cup non-fat yogurt or buttermilk
- Glaze:
- 1 cup icing sugar
- 2 tbsp. strong coffee
- Unsweetened cocoa powder

1) Preheat oven to 350°F and use an 8 inch spring form pan sprayed with nonstick vegetable spray

2) In a large bowl or food processor, beat together brown and granulated sugars, margarine, egg whites and vanilla until well blended. Add cocoa and mix until well incorporated

3) Combine flour, baking soda and baking powder; add to bowl along with coffee and yogurt. Mix just until combined, being careful not to over mix. Pour into pan; bake for 35 to 40 minutes or until tester inserted into center comes out dry. Let cool completely

4) Glaze: In a small bowl, mix icing sugar with coffee until smooth, adding more coffee if too thick. Spread over cake, smoothing with knife. Sift cocoa over top to decorate

Excellent!! To make coffee quickly, dissolve 1 tsp. instant coffee granules in 1/2 cup boiling water. Use decaffeinated if desired You can also make muffins with this recipe: just pour batter into 12 cups and bake for approximately 20 minutes
