Crock Pot Roast Beef and Gravy
A simple crock pot roast for dinner that will have your family, and you, smiling till dessert.
ingredients
- 1-5 to 6 lbs chuck roast
- 1 pkg dry onion soup mix
- 1-12 oz can Cream of Mushroom soup
- 1/2 cup onion (thinly sliced)
- 1 1/2 cups water (+ optional 1/2 cup water)
- salt and pepper to taste

Brown/Sear chuck roast in a very hot skillet on all sides. This will create greater depth of flavor as well as melt out fat that can be poured off before slow cooking.

Cover the bottom of a 6 quart crock pot with onion slices. Place browned chuck roast in crock pot on top of the onion slices. Salt and pepper the top of the roast lightly.

In a medium sized bowl mix dry onion soup mix, Cream of Mushroom soup, and 1 1/2 cups of water together until well blended. Be sure to break up all the clumps from the dry soup mix.

Pour the soup mixture over the roast, coating it completely. For extra gravy, add 1/2 cup water along the sides of the crock pot. Be careful not to disturb the soup mixture on the top of the roast.

Cover the crock pot with a lid and set the temperature to medium high. Let cook undisturbed for 8 hours.

Remove roast from crock pot and place on a large platter for slicing. Stir soup mixture in crock pot to form gravy.

Serve this wonderful roast with mashed potatoes, a perfect companion for the gravy made from the soup mixture and roast slow cooking all day.
