Greek Salad
ingredients
- 4 c sliced Romaine lettuce
- 1 cucumber, peeled and sliced
- 10-12 cherry tomatoes halved
- 1/4 red onion, thinly sliced
- 12 kalamata olives
- 1/2 c crumbled feta cheese
- 1/2 c garbanzo beans (optional)
- 1/2 c artichoke hearts (optional)
- DRESSING
- 1/3 cup olive oil
- 3 Tbs red wine vinegar
- 1/2 tsp salt
- 1/4 tsp dried oregano
- pinch of black pepper
directions
Arrange all the salad ingredients in a serving bowl. Whisk together the dressing ingredients and pour over the salad.
