Okonomiyaki (Japanese Pancake)
Okonomiyaki is a savoury Japanese style pancake that is made with a batter, shredded cabbage and other fresh grated vegetables. Okonomi translates to “as you like” or “what you want” so the pancakes can differ greatly between cooks.
1 cup flour, white or whole wheat
3/4 cup dashi (kelp stock base) or water
1 egg
1/4 of a cabbage, shredded
1 carrot, grated
1 zucchini, grated
1 green onion, chopped
3 or 4 slices bacon
Okonomiyaki sauce (or Worcestershire sauce)
Japanese mayonnaise

2 tablespoon vegetable oil
In a large bowl mix the flour, dashi (or water), egg, cabbage, carrot and zucchini together with a wooden spoon.
In a non-stick skillet heat vegetable oil on medium heat. Pour in mixture and top with the bacon slices. Cook on medium heat until golden brown on both sides, about 10-15 minutes per side.
Top with Okonomiyaki sauce (or Worcestershire sauce), Japanese mayonnaise and green onion.
Cut into quarters and serve warm.
