Moroccan Beef Stew
ingredients
- 2 1/2 lbs beef, chopped
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1 tbsp paprika
- 2 tbsp vegetable oil
- 1/2 tsp salt
- 1 can diced tomatoes
- 1 lb sweet potatoes, peeled and cut in chunks
- 1/2 cup raisins or currants
- 1 large onion, chopped
- 2 large cloves garlic, minced
- 1 can chick peas, drained

1. Combine dry spices, and toss with beef.

2. Heat oil, brown beef. Pour off drippings.

3. Stir in garlic and onions.

4. Stir in tomatoes, bring to a boil. Cover tightly, reduce heat and simmer 1 1/2 hours.

5. Add sweet potatoes and raisins. Bring to a boil, and simmer until tender.

6. Add chick peas. Optional 1/2 cup of kalamata olives can be added.

Serve over rice or couscous.
