Summer Salad
This is a fabulous salad but takes a little extra effort to gather the ingredients and prepare. Use fresh lemon juice for the dressing.
ingredients
- 2 stocks romaine lettuce
- 1 cup grated Swiss cheese
- 1 small can mandarin oranges
- 1 apple chopped
- 1 pear chopped
- 1 cup sliced strawberries
- 1 cup dried cranberries
- 3/4 cup cashew pieces
- Dressing:
- 1/2 cup sugar
- 1/3 cup lemon juice
- 2 tsps. finely chopped onion
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 2/3 cup oil (don’t use olive oil)
- 1 Tablespoon poppy seeds

Mix the first 5 ingredients in a blender or processor until well blended. Slowly add the oil. Mix well. Add in the poppy seeds. Blend well. (Best if refrigerated before serving).

Toss the salad ingredients with the dressing just prior to serving. Serve immediately.
