Herb & Onion Roasted Red Potatoes
I am not a lover of bland food so I am always trying to kick the flavor up a notch in foods that are ordinarily bland.
ingredients
- 1 1/2 lbs Red Potatoes washed and cut into quarters.
- 2-3 tablespoons Olive Oil
- 1 package of dry Onion soup mix
- Course sea salt or kosher salt
- Freshly ground pepper
- 1-2 sprigs of any fresh chopped herbs you want to add such as Thyme, Rosemary, Dill, etc *optional.

Wash the potatoes and cut them into quarters. Place them into a large plastic freezer bag. Drizzle with olive oil and then add the dry soup mix and herbs.

Seal the bag tightly and be sure it’s sealed! Keep turning the bag over gently and massaging gently until all the potatoes are evenly covered with the olive oil, herb and soup mixture.

Transfer to a shallow pan and then sprinkle the potatoes with the salt and pepper.

Roast in the oven for 35-40 Min’s. at 400F.
