Aunt Sylvia’s Polynesian Pea Salad

Originally this recipe was handed down by my mother’s Aunt Sylvia. The presentation is important. Use a tall crystal wide-mouth vase for the best appearance and a long spoon! We usually quadruple the recipe. My Aunt Terri has been responsible for it’s appearance over the last several years. So much so that it is now known as Terri’s Polynesian Pea Salad!

ingredients

  • 1 can French cut green beans
  • 1 can small peas
  • 1 can shoe peg white corn
  • 1 large jar pimentos
  • 1 cup celery, chopped
  • 1 cup spring green onions, chopped
  • 3/4 cup vinegar
  • 3/4 cup sugar
  • salt
