Slow Cooked Morrocan Chicken and Couscous
Great for large gorups and so simple! Serves 4-6
ingredients
- 4 carrots, peeled & sliced
- 1 large onion, thinly sliced
- 3 lbs chicken breasts
- 1/2 cup raisons
- 1/2 cup dried apricots, sliced
- 14 oz can chicken broth (1 3/4 - 2 cups)
- 1/4 cup tomato paste
- 2 tbsp all-purpose flour
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 1.5 tsp cumin
- 1.5 tsp ground ginger
- 1 tsp cinnamon
- ground black pepper
- 2 boxes cous cous
- pine nuts (for garnish)

Place carrots and onions in the bottom fo the slow cooker. Add the chicken and top with raisons and apricots.

In a bowl, whisk the chicken broth, tomato paste, flour, lemon juice, garlic, cumin, ginger, cinnamon, and ground black pepper. Add mixture to cooker.

Cover and cook on low-heat setting for 6.5 - 7 hours or on high-heat setting for 3.5 - 4 hours. Serve in bowls on top of cous cous and sprinkle with pine nuts.
