Kale Crustless QuicheTabetha
What a great way to use up your veggies! Turn it into a crustless and quiche and pair it with a fresh salad of mixed greens. Good and good for you!

- 1 hefty bunch kale or collard greens
- 1 small yellow onion, diced
- 2 Tbsp. olive oil
- 5 large eggs
- 3/4 cup milk
- 1/2 cup shredded cheese
Preheat oven to 375°. Chop kale into thin ribbons and whirl through a salad spinner. Heat oil over medium heat. Add chopped onions and sauté until soft and slightly caramelized. Add chopped kale and sauté until wilted. Season with salt and pepper. Set aside.
Whisk eggs and milk until frothy. Spray a 9x9 glass pyrex pan with cooking spray and add kale mixture. Pour egg mixture over the kale and blend together with a fork. Top with shredded cheese.
Bake until firm in center, approximately 30 minutes. Let cool for 5 minutes, slice and enjoy!
