Hoison Beef & Scallion Rolls
This is a sure hit at a party. They take awhile to make, but they are well worth it.
ingredients
- 1/2 cup soy sauce
- 1/2 cup olive oil
- 3 cloves garlic crushed
- 1/2 cup chopped fresh ginger
- Freshly ground pepper
- 1 lb London broil or Flank Steak
- 1/2 cup hoisin sauce (optional)
- 1 bunch of scallions, white and pale green parts only cut into 2 inch julienne

In a shallow dish, mix the soy sauce, oil, garlic, ginger, and some pepper. Add beef and marinate overnight in the refrigerator. I sometimes just cook the beef and then put the rolled up ones in this sauce and refrigerate.

Cook steak to your liking. Rare to medium rare is recommended. Cool then slice on the bias, cutting across the grain of the meat. Make the slices approximately 2 - 4 inch strips.

Brush a thin layer of hoisin on each strip of beef. Lay a bundle of scallion julienne at one end and then roll up securely.

Arrange on tray seam side down, refrigerate until ready to serve.
