Fava Bean Bruschetta
I was always a bit frightened of fava beans before I tried this recipe. They looked so large and ugly, and I knew there were multiple steps to cooking them, but after trying a version of this at a local Carmel Valley restaurant, I figured I’d give this recipe a try. It was so much easier than I thought, and delicious too!
ingredients
- 1 1/2 pounds unshelled fava beans
- 1 Tbsp. chopped fresh tarragon
- 1 1/2 Tbsp. extra virgin olive oil
- 1 Tbsp. fresh lime juice
- 1/4 tsp. salt
- 1 garlic clove, minced
- 1 French bread baguette, cut into 32 slices
- 1/2 cup shaved Manchego cheese

Remove beans from pods; discard pods. Cook beans in boiling water 1 minute, then rinse with cold water. Drain. Remove outer skins from beans. Discard skins.

Place beans in a food processor. Add tarragon and the remainder of the ingredients; process until smooth.

Spread bean mixture over baguette slices and top with cheese.
notes
Feel free to substitute other herbs for the tarragon and Parmesan cheese or other cheese for the Manchego.
