Strawberry Crunch Cake
aka Ruby’s Birthday Cake!
ingredients
Cake (one 8" round)- 3/4 cup milk
- 2 large eggs , room temperature
- 1/2 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup sugar
- 2 teaspoons baking powder
- 1/4 teaspoon table salt
- 6 tablespoons unsalted butter , softened but still cool
- 2 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup sugar
- 2 quarts strawberries , hulled and sliced thin
- 3 tablespoons granulated sugar
- 2 cups heavy cream
- 12 whole strawberries for garnish
- Confectioners’ sugar for dusting
