Oriental Style Spicy Prawns by Iye and Mathieu
Medium spicy,
ingredients
serves 2,3- • 300 g raw tiger prawns (shrimps)
- • 1/2 egg white (lightly beaten)
- • 600 ml or 2 1/2 cups vegetable oil
- • Cashews nuts, to garnish (Optional)
- • a pinch of salt
- • 1 tsp ginger (chopped finely)
- • 2 Spring Onions (chopped)
- • 2 garlic clove (chopped finely)
- • 3-4 dried red chillies (seeded and chopped)
- • 1 tbsp light soy sauce
- • 1 tsp Chinese cooking wine (Shaoxing wine) or dry sherry
- • 1 tbsp tomato purée or ketchup
- • 1 tbsp Oyster sauce
- • 2-3 tbsp water

1. Peel the raw prawns, then mix them with salt, egg white
- 2
2. Heat the oil in a small pot, then deep-fry the prawns in hot oil for 1 minute. Remove and drain them on paper towels.

3. In a pan, heat some oil, add in all the ingredients for the sauce, bring to the boil and stir until smooth and well blended.

4. Add the prawns to the sauce, stirring to blend. Garnish with Cashew nuts and serve it with rice.

Iye's Short Cut : Skip step 1 and 2 by using cooked prawns, remove shells and mix them into step 3 ☺
