BBQ Macaroni Salad
ingredients
- 1 pound elbow macaroni
- 1 red pepper
- 1 rib celery, chopped fine
- 4 scallions, sliced thin
- 2T cider vinegar
- 1t hot sauce
- 1t chili powder
- 1/8t garlic powder
- pinch cayenne pepper
- 1c mayonnaise
- 1/2c barbecue sauce (Bull’s eye is best)
- salt, pepper
directions
Cook macaroni in boiling water for 5 min. Drain and rinse with cold water. Transfer to lg bowl. Stir in bell pepper, celery, scallions, vinegar, hot sauce, chili powder, garlic powder, and cayenne. Let stand 5 mins. Stir in mayo and barbecue sauce. Let stand 5 min. Season with salt and pepper. Serve
