Chicken Curry
We love to eat this over couscous, but it is also great with rice.
ingredients
- 1/4 cup vegetable oil
- 2 boneless, skinless chicken breasts, cubed
- 1 onion, chopped
- 1 tsp cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/2 tsp coriander
- 1 Tbs garlic powder
- 1 bay leaf
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 Tbs curry powder
- 3 potatoes, unpeeled and cubed
- 2 carrots, sliced
- 1 Tbs tomato paste
- 1 cup plain yogurt
- 1 can chick peas
- 1-2 cups chicken broth

1. Heat oil over medium heat. Saute onion until lightly browned. Stir in spices (cumin through curry powder); stir for about 2 minutes.

2. Add chicken, potatoes, and carrots; stir for 1 minute. Stir in yogurt, then add chicken broth just to cover ingredients.

3. Bring to a boil, then reduce heat and simmer for about 20 minutes or until chicken is cooked through and potatoes and carrots are tender.

4. Add chickpeas and simmer 5 more minutes. Serve over rice or couscous.
