City Wok Lo Mien Salad
ingredients
Dressing- 3 T soy sauce
- 3 T light soy sauce
- 3 T Chinese rice wine
- 3/4 cup vinegar
- 3 T creamy peanut butter
- 3 T chunky peanut butter
- 1 T Asian chili sauce
- 3/4 T sesame oil
- 6 oz Lo Mien noodles
- 3 1/2 cups bean sprouts
- 1 large carrot thinly sliced
- 2 green onions, sliced
- 2 T toasted sesame seeds
- 1 boneless skinless chicken breast, cooked, shredded

Combine soy and light soy sauces, rice wine, vinegar, creamy & chunky peanut butters, chili sauce, & oil till blended (makes 1 cup)

Cook noodles in boiling water according to package about 3 min. Drain and chill

Combine bean sprouts, carrot, green onions, sesame seeds, chicken, chilled noodles in large bowl. Add peanut sauce and toss, breaking noodles up a bit as you stir.
