Chop Salad
Enough for a crowd!
ingredients
- 1 1/2 cups sugar snap peas – blanched & chilled
- 1 1/2 cups fresh or frozen corn – blanched & chilled
- 1/2 head of romaine lettuce roughly chopped
- 1 cucumber diced
- 1 carrot shredded
- 1 red or green bell pepper diced
- 3 green onions, sliced
- 5 radishes, thinly sliced
- 1 cup basil leaves, sliced in thin strips
- 6 cherry tomatoes, halved
- 1/2 cup fresh shredded parmesan cheese
- 2 Tbsp red wine vinegar
- 1 Tbsp fresh lemon juice
- 1 Tbsp Dijon mustard
- 9 Tbsp olive oil
- Salt & Pepper

Combine vegetables, toss with dressing and serve with optional topping.

Topping: 12 bacon slices, cooked and crumbled
